About the brewery

The Kocour brewery in Varnsdorf was one of the pioneers of a new perspective on beer and brewing in Bohemia. It showed the domestic conservative beer drinker that beer is not just a chilled ten in the fridge.

Beer is more than a Czech lager, it goes wonderfully with gastronomy and can be drunk according to the season or mood. That is why we offer a wide range of beer specials, ranging from traditional lagers to various top-fermented specials, which we are constantly trying to improve.

In addition to the brewery restaurant with a spacious terrace, the brewery area offers a separate pergola and sports facilities. For this reason, the Kocour area is a popular venue for weddings, company parties and cultural events for adults and children.

Not only young visitors will appreciate the brewery ZOO, where many, not only farm animals, can be seen. And believe it or not, Pivovar Kocour also has its own railway station, the only one in the Czech Republic.

The accommodation offer is also diverse. In addition to comfortable rooms, during the summer season it is possible to use the capacity of stylish sleeping cars.

Technology

Ingredients

Czech hops from the Žatec region are used to brew Czech beer, Moravian malt supplied by Raven. Specials are brewed using ingredients according to the style, such as smoked malt from the Weyermann malt house in Bamberg in Bavaria, English hops Fuggels, Northern Brewer or Challanger, or American hops for IPA beers, American pale ale, etc. such as Cascade, Chinook, Centennial or Columbus. We use hops in the form of granules.

Water

We use water from the local water supply to brew our beers. Due to its quality, it does not need to be treated. However, our own well is also being dug, which should be put into operation next summer.

Beer brewing

Beer brewing differs depending on the type of beer brewed. Lagers are brewed in a single mash process, while top-fermented beers are brewed using an infusion method, with the exception of weizen beers, which use a single mash process. Kocour Brewery has a unique (one could say historical) all-copper wort with a wort capacity of 13 hl.

Fermentation

Kocour Brewery brews bottom-fermented (lagers) and top-fermented beers (ales – stout, saison, weizen...). In principle, it is the same technology, the main difference is the use of different yeast strains and higher fermentation and maturation temperatures for top-fermented beers. That is why we use closed fermentation in our brewery, because different yeast strains "don't like each other" and mixing them would lead to taste differences in the final product.

Yeast cultures are supplied to us by Pivo Praha, while top-fermented ones are prepared in cooperation with The Brewing Science Institute in Colorado, United States.

Beer maturation

Beer maturation takes place in closed standing tanks with a capacity of 13 hl. The minimum aging time for Czech-style lagers is 4 weeks, for top-fermented beers, it is according to the recommended aging time corresponding to the given style.

Beer distribution

You can buy Kocour beer almost all over the country these days. The beer is distributed in kegs and bottles to restaurants that can be described as "beer geeks" - they offer beers from various breweries. More information in the "Points of Sale" section.
